Ingredients:
Green beans (washed and trimmed)
1-2 Bell peppers (sliced)
2-3 Sausages (here I used pre-cooked chicken & basil sausage)
1 Thai chili (any hot pepper will do)
4-5 Cloves chopped garlic
2-3 Tbs Soy Sauce
1-2 Tbs Rice wine vinegar
2-3 Tbs Avocado oil (or any neutral oil)
1-2 Tsp Sesame oil
2-3 Tsp Honey
Creole seasoning
Salt & pepper
Fresh lemon squeeze

Optional Garnish:
Green onion
Peanuts
Sesame seeds

Heat pan on medium-high heat and add in your neutral oil. Once hot, add in sliced sausage. Season with salt, pepper, & creole seasoning and cook until browned. Remove sausage from the pan and set aside. In the same pan, add in chopped garlic and thai chili –sauté until fragrant being careful not to burn the garlic.

Next, add in washed and trimmed green beans, sliced bell pepper. Season with salt, pepper, and creole seasoning. Sauté for a few minutes until pepper begins to soften. Then, add in some soy sauce, rice wine vinegar, and sesame oil. Add in peanuts here if desired as well. Sauté for a few more minutes until green beans are desired tenderness.

Finally, add some honey (or other sweetener) and fresh lemon squeeze. Add the sausage back into the pan, continue to cook until the sausage is warm again. Taste the dish and adjust any necessary seasoning.

Remove from pan and serve alone or over rice. Garnish with green onion and sesame seeds.

Don’t worry if you’re missing ingredients, just make sure you’re creating a balance of acid, sweet, and salt.
